Cozido das Furnas is one of the world’s most unique dishes and you can only get it in the Azores due to its special geothermal conditions.

Sao Miguel is one of its most naturally beautiful islands, and there’s a special place called the Furnas Valley which is near a lovely lake surrounded by green mountains and terrain that is dotted with bubbling hot springs underneath.

Locals take a pot and place in it pork, beef, cabbage, kale, potatoes, yams, carrots, chicken, chorizo, and blood pudding wrapped in a kale leaf. They sprinkle a bit of salt and set it in the ground for 6 hours, letting the volcanic steam do is work. There is no liquid used in the pot, rather, the meal cooks with its own natural juices.

Line in a pot by layers in the following sequence: Pork, Beef, Cabbage, Kale, Potatoes, Yam, Carrots, Chicken, Chorizo and Blood Pudding (wrapped in a kale leaf), and seasoning with salt.
