1. After Thanksgiving Wrap
INGREDIENTS
1 large Crepini® Egg Wrap with Cauliflower
2-3 oz turkey meat
1 tablespoon turkey stuffing
1 teaspoon cranberry sauce
1 teaspoon parsley (option)
DIRECTIONS
- Fold the large Crepini into half a circle and place it on a plate.
- Microwave the turkey meat and stuffing for about 1-2 minutes on a separate plate or heat up on a non-stick pan for a few minutes.
- Place the meat on top of the Crepini.
- Layer the stuffing on top of the turkey meat.
- Add cranberry sauce or gravy sauce on top of the wrap.
- Sprinkle parsley onto this wrap for a pop of freshness.
2. Peppermint and Chocolate Chips Mini Cream Cups
INGREDIENTS
3-4 small Crepini® Egg Wraps with Cauliflower
1 cup Heavy cream
1 tablespoon Confectioner’s sugar
1 teaspoon Monk fruit sugar (optional for added sweetness)
1 tablespoon Crushed peppermint candy
1 tablespoon of chopped dark or milk chocolate
DIRECTIONS
- Preheat the oven to 200°F.
- Spray ramekins with oil to prevent the Crepini’s from sticking.
- Bake for10-12 minutes until slightly crispy.
- Leave to the side to cool.
- Carefully remove the Crepini cups from the ramekins.
- Place the heavy cream into a bowl and beat with a mixer until it starts to look like foam.
- Slowly add sugar to the mix and beat until the peaks form.
- Carefully pour the mix into the mini cups
- Add bits of crushed peppermint and chocolate.
- Serve and enjoy!
3. Yule Log
INGREDIENTS (1 SERVING)
2 large Crepini® Egg Wraps with Cauliflower
1.7 oz instant vanilla pudding mix
1 cup heavy cream
1 cup Nutella
2 tsp powdered sugar (optional)
DIRECTIONS
- Place clear saran wrap (at least 12” wide and 20” long) on a wide flat plate.
- Add a Crepini® Egg Wrap on top of the saran wrap.
- Spread Nutella on one side of a second Crepini Egg Wrap.
- Layer the 2 Crepini Egg Wraps on top of each other to give the yule log a firmer shape; please leave the chocolate side facing up.
- Place instant vanilla pudding mix and heavy cream into a bowl
- Use a handheld blender to whip those two ingredients together until it becomes a thick and smooth consistency like pudding (2-3 min).
- Slowly add the pudding on the Nutella side of the Crepini and gently roll into a yule log shape.
- Roll up the yule log with saran wrap and place it on the freezer for 2-3 hours; keep the log on a plate or flat surface.
- Remove the yule log from the fridge and use a fork to create bark-like linear lines from one end of the open log to the other end.
- Slice about ½ inch from each end so it looks flat.
- Sprinkle powdered sugar and add a cute holiday décor for more of a festive appearance.
